½ Head of cabbage (chopped thinly)
¼ cup black olives (sliced)
1/8 cup pepperoncinis (sliced)
2 ½ tablespoons of capers
½ Large tomato
1/8 cup feta
Balsamic Vinaigrette
½ cup olive oil
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon pepperoncini pickling juice
½ shallot (finely chopped)
Salt and pepper

Balsamic Vinaigrette Instructions
In a small bowl, whisk together olive oil, balsamic vinegar, mustard, pepperoncini juice and shallots. Season to taste with salt and black
pepper.
Salad Instructions
In a large serving bowl, combine the cabbage, olives, tomatoes, capers and pepperoncinis. Drizzle with dressing; toss to coat. Sprinkle
with feta and pine nuts.
