Bolt (Bacon, Onion, Lettuce, Tomato)
2 ¼-½ inch thick slices of sourdough bread
2 tablespoons readymade pesto
3 pieces apple wood-smoked thick cut bacon (cooked)
1 ripe medium tomato (sliced)
½ red onion (sliced)
⅛ cup Worcestershire sauce
2 ounces goat cheese
1. In a medium pan sauté onions in Worcestershire sauce until tender then set aside for later use.
2. Heat goat cheese in microwave for 7 seconds.
3. Mix goat cheese in bowl with pesto. Spread one side of each piece of bread with pesto mix.
4. Stack one slice with bacon, tomato slices and butter lettuce leaves. Top with sautéed onions and second slice of pesto-laden bread.
